Sandy Springs resident Stephanie Anchor makes this easy, healthy side dish to compliment her entrees.
1 bunch or bag of fresh Brussels sprouts
1-2 tablespoons of extra virgin olive oil
Salt and pepper to taste
Preheat oven to 400 degrees.
Line a cookie sheet with foil and spray with cooking spray.
Cut off the bottom ends of Brussel Sprouts. If leaves fall off, keep on tray or discard.
Place sprouts on tray and drizzle with olive oil.
Toss and sprinkle with salt and pepper to taste.
Place in oven for about 25 minutes.
