Recipe: Poached Pears

Consider this tasty treat for your Passover seder.

Poached Pears
Poached Pears

Prep time: 15 minutes, cook time 2 hours; recipe for 4 people. When making more than for you do not need more spices.

Ingredients:
1 pear per person Bartlett pears
1 bottle of red wine preferably a Pino noir
1 half gallon of orange juice
3-star anis
2 cinnamon sticks
2 tbsp whole cloves
4 whole nutmegs (hit with mallet to crack)
2 tbsp of honey
2 tbsp of sugar

Optional ingredients:
1 tbsp of cooking lavender
2 vanilla beans (cut down the center)

Directions:
1. Peel the pears.
2. Place in the smallest pot where they can all sit at the bottom of pan.
3. Fill the pot until the pears are almost covered with half orange juice and half wine.
4. Put in sugar and all the spices and turn on to boil.
5. Once it’s hot, put in the honey and stir it in.
6. Let sit for 2 hours as the liquid should be above a simmer but not boiling over.
7. Check on it every 30-ish minutes to make sure you still have enough liquid in the pot; you may need to add more, at this stage wine or orange juice is fine to add.
8. Halfway through, turn the pears over.
9. When you serve them, add some of the liquid on top.

* Best served on top of vanilla ice cream or non-dairy ice cream options.
